Another sourdough experience

This chubby is the result of 114 tries through this last year.

I am not sure if the ratio of different flours made this loaf rise higher, or it is because of our new Viking Range convection oven.

The crumb was also better, but I I think that’s due to feeding my starter twice a day rather than once.

I wish I had taken a photo of  yesterday’s starter which spilled out of the jar three hours after it was fed. Some of these moments just get away, I tell you.
